1. In a large stock pot, combine pork butt, vinegar, soy sauce, salt, garlic, bay leaf, pepper, sugar and water.
2. Let the ingredients marinate for at least 30 minutes.
3. Cover the pot and simmer for 1 hour or until meat is tender.
4. Drain and reserve the broth.
5. Heat vegetable oil in a skillet until shimmering.
6. Add the cubed pork and brown the meat on all sides. Transfer to a serving dish.
7. Pour off any remaining oil from skillet.
8. Add the reserved broth and cook for 1 to 2 minutes scraping all browned bits sticking to pan. This is flavor goodness.
9. Pour the sauce over the meat and serve.
