1. Place whole beaver tails under the oven broiler until scaly skin blisters.
2. Let cool in freezer.
3. Remove cold, blistered skin and discard it.
4. Put white meat aside.
5. In shallow roasting pan, sauté the sliced onion in butter until onions are translucent.
6. Add mustard and stir to coat the onions.
7. Add sherry, tabasco sauce and half of the barbecue sauce, making sure bottom of the pan is covered.
8. Spread out beaver tails in pan, cover with remaining barbecue sauce, sprinkle with parmesan cheese.
9. Bake in a preheated 450°F oven for 45 minutes.
10. Serve hot, topped generously with pan juices.

Never thought I'd cook beaver tails, but this turned out pretty good. Had to adjust the barbecue sauce a bit, but all in all, a solid recipe. I gave it a 4 |
