1. Place the pie shell in a pie plate.
2. Line the thinly sliced apples around the pie shell.
3. Place them close together but not on top of one another. Set aside.
4. Beat the sugar, cinnamon, skim milk, and vanilla together until the sugar has dissolved and there are no lumps.
5. Take 4 tablespoons of the milk mixture and stir into the combined flour and cornstarch to make a paste.
6. Stir the paste back into the milk mixture.
7. Pour this mixture over the apples.
8. Bake in the preheated 400°F oven for 45-50 minutes.
9. Serve warm or cold.
