1. Heat the olive oil in a large saucepan until shimmering.
2. Add onion, garlic, ground coriander, cumin.
3. Cook over moderate heat for 10 minutes, stirring often.
4. Add avocados and chicken stock.
5. Bring to a boil, then reduce heat to medium and cook for 20 minutes.
6. Cool to room temperature.
7. Puree soup in blender until smooth.
8. Return to the pan and bring back to a boil.
9. Add pickled green peppercorns.
10. Reduce to moderate heat and cook for 10 minutes.
11. Taste for seasoning and add salt and pepper to your liking.
12. Serve garnished with cilantro sprigs and additional peppercorns.
