- 21 ounces of Tomato soup is usually 2 standard cans.
- Skin and clean the Muskrat, remove the fat, scent glands and white tissue inside each leg.
1. Saute bacon, celery, onions, margarine and cayenne pepper together for 10 minutes.
2. Place rats in the bottom of a pan that has a tight fitting lid.
3. Pour the bacon sauté mixture over the Muskrats.
4. Add the tomato soup. Don't add water or milk to the soup.
5. Cover with a tight fitting lid and bake in the preheated 350°F oven 2-1/2 to 3 hours, until the Muskrats are tender.

I followed the recipe exactly, but no matter what, it was awful. The muskrat meat had a strong flavor that I couldn't get past, and overall, the dish didn't appeal to me at all. I won't be making this again. I gave it a 1 |
