1. Mix ground Emu with taco seasoning.
2. Form into 4 patties.
3. Cook over very hot grill or in skillet over high heat 4 to 5 minutes per side.
4. At the last minute add the cheddar cheese to each Emu patty.
5. Allow the cheese to melt.
6. Spread sour cream on both halves of the hamburger buns.
7. Add Emu patties, lettuce and tomatoes.
8. Enjoy.
