Apple Cranberry Bars

1 1/2 cups Sugar
1 1/3 cups Butter » softened, divided
2 large Eggs
3 teaspoon Orange Peel » grated, divided
2 teaspoons Vanilla Extract » divided
2 1/4 cups All-purpose Flour
1 teaspoon Baking Soda
1/4 teaspoon Salt
2 cups Apples » peeled, chopped
1 cup Cranberries » coarsely chopped
1 cup Nuts » chopped
3 ounces Cream Cheese » softened
2 cups Powdered Sugar
2 teaspoons Milk » to 4 teaspoons

Directions:
Preheat oven to 350°F / 180°C / Gas Mark 4

- Grease a 15 x 10 x 1-inch jelly roll pan. Set aside.

1. In a large mixing bowl, combine the sugar, 1 cup of butter, eggs, orange peel and 1 teaspoon of vanilla extract.

2. Beat on medium speed, scraping the bowl often, for 2 to 3 minutes until well mixed.

3. Reduce the speed to low, add the flour, baking soda and salt.

4. Continue beating, scraping the bowl often, for 1 to 2 minutes until well mixed.

5. By hand, stir in the apples, cranberries and nuts.

6. Spread the mixture into the prepared jelly roll pan.

7. Bake in the preheated 350°F oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

8. Cool completely.

9. For the frosting: In a small mixer bowl, combine the remaining butter, cream cheese and 1 teaspoon of vanilla extract.

10. Beat on medium speed, scraping the bowl often, for 1 to 2 minutes until well mixed.

11. Reduce the speed to low. Continue beating, gradually adding the powdered sugar, remaining orange peel and enough milk for desired spreading consistency.

12. Thinly frost the cooled bars and cut into your desired size or shape.
