1. Carefully wash and prepare the dandelion greens as you would lettuce.
2. Roll in a clean cloth and pat dry.
3. Place into a salad bowl and set aside.
4. Cut bacon into small pieces, fry to your enjoyable consistency.
5. Pour over the Dandelion greens.
6. Put the butter and cream into a skillet and melt over a low heat.
7. Beat the eggs.
8. Add salt, pepper, sugar, paprika, vinegar and mix with slightly warm cream mixture in the pan.
9. Increase the heat, stir until dressing becomes thick like custard.
10. Take off the heat and pour piping hot over dandelion greens.
11. Stir thoroughly and enjoy.

Decent salad. The bacon adds a nice crunch, but I found the dressing to be a bit too heavy for my taste. Maybe reducing the amount of cream would improve it. Overall, not bad. I gave it a 3 |
