1. In a small bowl, whisk together the vinegar, olive oil and pepper to make a vinaigrette. Set aside.
2. In a large skillet, over medium-high heat, melt the butter to shimmering.
3. Add the grapefruit sections, paprika and salt.
4. Reduce the heat slightly and saute until the grapefruit is heated through about 2 to 3 minutes.
5. Add the baby spinach and gently fold everything together with the warm fruit just long enough to wilt the spinach, about 1 minute.
6. Transfer the warm spinach-grapefruit mixture to a salad bowl and add the vinaigrette.
7. Toss well and divide among 6 individual salad plates.
