- Be careful not to overcook the cockles as they shrink easily.
- Use live cockles for the freshest flavor. Live cockles will move when you open the shells.
1. Clean the cockles thoroughly by rinsing them in water and rubbing vigorously.
2. Place them in weak salted water for 3 hours to remove any sand or grit.
3. In a bowl, mix together the soy sauce, minced green onion, minced garlic, red pepper flakes, sesame seed powder, and sesame oil to create the seasoning sauce.
4. Drop the cockles into boiling water for 2 minutes, then remove them.
5. Discard any empty shells and place the shells with cockle meat on a heat-proof dish.
6. Sprinkle the seasoning sauce evenly over the cockles.
7. Steam the dish in a steamer for 3 minutes until the flavors meld together and the cockles are cooked through.
