Spiced Apples

4 large Apples » tart
3 tablespoons Lemon Juice » divided
3 cups Water
1 1/2 cups Sugar
1 teaspoon Ground Cinnamon

Directions:
Preheat oven to 375°F / 190°C / Gas Mark 5

- Peel, core and halve the apples.
- Sprinkle immediately with 2 tablespoons of lemon juice, to prevent the apples from browning.

1. In a large skillet, combine the water, sugar and the remaining lemon juice.

2. Simmer for 5 minutes, uncovered.

3. Add the apple halves and poach over medium heat for about 10 minutes, or until barely tender, but not soft.

4. Turn the apples once while poaching.

5. Remove the apple halves with a slotted spoon and arrange, cut side down, in a baking dish.

6. Sprinkle with cinnamon. Set aside.

7. Over high heat, reduce the syrup in the skillet to 1/2 cup.

8. Pour the syrup over the apples and bake in the preheated 375°F oven for about 15 minutes, basting with syrup once.

9. Turn once as the apples cook.

The spiced apples were delicious and the cinnamon was a nice addition. I would have liked them a bit softer. I'll cook them a little longer next time.
