Baby Spinach And Warm Potato Salad

Ingredients:
Qty Unit Ingredient
1 1/2 pounds New Potatoes
1/4 pound Prosciutto
1/4 cup Olive Oil
2 tablespoons Lemon Juice
1 teaspoon Dijon Mustard
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1/2 pound Baby Spinach
8 leaves Radicchio » torn
1 medium Avocado » peeled, sliced
Prep Time Process Time Overall Time
30 Minutes 15 Minutes 45 minutes
Directions:

1. Place potatoes into a medium saucepan. Cover with cold water.

2. Bring to boil over high heat.

3. Reduce heat to medium and boil gently for 20 minutes or until just tender.

4. Meanwhile, heat a large non-stick frying pan over medium-high heat.

5. Add prosciutto and fry for 2 to 3 minutes on each side or until crisp.

6. Remove from pan, cool and break into pieces.

7. Whisk olive oil, lemon juice, Dijon mustard, salt and pepper until well combined.

8. Drain potatoes and cut in half.

9. Place spinach leaves and radicchio onto serving plates.

10. Top with potatoes, prosciutto and avocado.

11. Drizzle with dressing and serve.
