1. Trim the Tuna and cut off any skin. Cut into 4 ounce portions.
2. Prepare the sauce by combining dry mustard, Dijon mustard and soy sauce into a mixing bowl and blend well. Set aside.
3. Peel carrots and cut into 2 inch long pieces. Then cut into thin slices.
4. Trim the leaves from celery and cut into 2 inch long pieces. Then cut into strips.
5. Peel Daikon radish cut into 2 inch long pieces. Then cut into thin strips.
6. Combine three vegetables together. Blend well.
7. Roll cut Ahi Tuna pieces in the Cajun spice and sear to rare temperature in a skillet.
8. Remove tuna from pan and slice into thin slices.
9. Place the sauce on a plate and place cut tuna on top.
10. Arrange the fresh vegetables decoratively around the Tuna.
11. Garnish with pickled ginger and cilantro.
