1. Thinly slice the lemons and chop the oranges, keep the peel on for added pectin.
2. Measure to ensure you have about 1 cup of lemon slices and 3 cups of chopped oranges.
3. In a large mixing bowl, combine the sliced lemons, chopped oranges, and 4 cups of water.
4. Let the mixture stand for 12-18 hours in a cool place, allowing the flavors to meld and the peel to soften.
5. Transfer the soaked citrus mixture to a large pot.
6. Cook over medium-high heat for approximately 30 minutes, or until the citrus peel becomes tender.
7. Remove from heat and allow to cool.
8. Once cooled, stir in the peeled, chopped, and seeded prickly pears along with 6 cups of sugar to the pot.
9. Return to medium heat and cook, stirring frequently, until the mixture begins to thicken, about 25-30 minutes.
10. The marmalade is ready when it coats the back of a spoon or reaches the desired thickness.
11. Meanwhile prepare your canning jars by sterilizing them in boiling water.
12. Once the marmalade is done, pour the hot mixture into the sterilized, hot half-pint jars, leaving about 1/4 inch of headspace.
13. Wipe the jar rims and apply the lids and rings.
14. Process the jars in a boiling water bath for 5 minutes to seal.
15. Remove the jars from the water bath and let them cool completely.
16. Check the seals by pressing down on the center of each lid. If the lid doesn’t pop back, the jar is sealed properly.

If your jars didn't seal, put them in the refrigerator and use them first. They won't store properly if the jars didn't seal. I gave it a 5 |
