Greek oregano tends to be the most savory and earthy oregano, while Italian is milder and Turkish is more pungent.
Used fresh or dry, Mediterranean types of oregano is the choice for dishes from this region, such as tomato sauces, pizzas, grilled meats, and other dishes with strong flavors.
In a pinch, you can use another Oregano as a substitute for Rigani, the flavor will be milder.
Next time you're grilling, use a bunch of rosemary sprigs tied together as your basting brush. It's a helpful tip that gives your food a hint of rosemary flavor and makes your backyard smell wonderful, too. Tie them up, dip in oil, and brush on your meats or veggies.
