Ingredient - Corn Syrup

Updated December 31st, 1969

Corn syrup is a food syrup which is made from the starch of corn and contains varying amounts of maltose and higher oligosaccharides, depending on the quality.

Corn syrup, also known as glucose syrup to confectioners, is used in foods to soften texture, add volume, prevent crystallization of sugar, and enhance flavor.

When stored properly, corn syrup can last for many years if it is not opened. Most corn syrup is safe to eat indefinitely, but if it fails the test of color and odor, discard the corn syrup.

If the corn syrup is opened, it will last up to 6 months without spoiling.

Tips and Hacks
Don't throw pasta up against the wall to see if it's cooked. This is a myth and makes the wall really hard to clean. Pasta is al dente when it starts to float in the boiling water.
