Baking powder, also referred to as sodium hydrogen carbonate, is a leavening agent.
It is used to increase the volume and lighten the texture of baked goods, such as cakes, muffins, cookies, etc. It's a white crystalline powder, also known as sodium bicarbonate.
Once opened, a box of baking powder will keep for up to six months.
Baking powder should be stored in its original box or a small airtight container. Keep it in a cool, dark place, as heat, moisture and sunlight will reduce its potency and power.
