Diced tomatoes are simply chopped tomatoes prior to canning.
They are then processed with calcium chloride and citric acid to help the pieces keep their shape.
Diced tomatoes are generally tomato chunks packed in tomato juice. There are no issues cooking with canned diced tomatoes; they can be an excellent timesaver.
Since canned tomatoes are a high acid food, they will last, stored in a cool, dry place, for up to 18 months.
