Stewing chickens must be more than 10 months old. They are typically egg laying hens that have passed their heyday and no longer laying enough eggs to make them profitable.
They're generally a tougher, fatty poultry that need to cook for a long time in order to be tender.
Because of their rich nutritional content, stewing chickens make excellent stock. The lean meat contains a high level of connective tissue, which works wonderfully for slow cooked dishes such as stew, soup, and chicken and dumplings.
