Parsley has a much higher food value than most herbs and is frequently classified as a vegetable.
The curly variety of French parsley is the most popular for garnishing and seasoning but it tends to diminish in flavor with drying.
Italian parsley with the large flat leaves holds its flavor better when dried. Dried parsley will readily re-absorb moisture from the air, so it must be packaged extremely well.
Parsley is a popular seasoning for meats, fish, soups, casseroles or vegetable dishes.
When cutting Parsley from your garden, always remove the outer leaves rather than the inner leaves, as growth is from the center.
