Dark Molasses is produced after the second boiling of sugar cane or sugar beets.
Known as Full or Second molasses, the next extraction results in a liquid that is darker in color, thicker and less sweet than the first stage.
With more sugar being extracted, dark molasses can be used in a recipe. It is commonly added to gingerbread cookies.
