Apple - Cranberry Breakfast Pudding

1 cup Cranberries fresh, halved
3/4 cup Brown Sugar packed
4 cups Milk
1/2 teaspoon Salt
1/2 cup Golden Raisins seedless
2 cups Oatmeal uncooked
5 whole Red delicious apples cored
1 cup Pecans chopped
2 tablespoons Granulated sugar
1/4 teaspoon Cinnamon

This item makes 8 Portions. Scale to Portions
Preheat oven to 350°F / 180°C / Gas Mark 4
Combined the cranberries and 1/4 cup of brown sugar; set aside.
Mix 2 tablespoons of granulated sugar and 1/4 teaspoon cinnamon; set aside.

Place milk, 1/2 cup brown sugar and salt in a large microwave-safe bowl. Heat in microwave until very hot but not boiling, on HIGH (100 percent power).

Add raisins, oatmeal, apples, cranberry mixture and nuts. Mix well. Place into an oven proof dish and bake for 30 minutes at 350°F. Stir before serving. Top with cinnamon sugar mixture. Serve.
