Freeze your flour. It keeps very well when frozen and will also kill any possible pests.

Black Currant Jam

6 cups Black Currants stemmed, washed
1 cup Water
2 cups Sugar
1/3 cup Honey

Place currants and water in a large pot. Heat over low heat, stirring occasionally.

Mash the black currents with a potato masher. Be careful of splash back from the currents. They tend to pop a bit. Mash to the consistency that you would enjoy your jam to be.

Turn up the heat and allow the currents to boil.

Turn the heat down to simmer. Stir in sugar and simmer, stirring often, for 5 minutes. Add honey, simmer an additional 4 minutes.

Ladle into glass jars with a lids. Let cool on the counter, away from heat. Refrigerate and enjoy.
Tips and Hacks

Pre-heat your frying pan before you add oil or butter. Food is less likely to stick.
