1 large Avocado
1/2 cup Half and half chilled
1 1/2 cup Chicken broth
1 tablespoon Lemon juice

This item makes 4 Portions. Scale to Portions

Pit and peel the avocado, then cut into chunks.

In a blender, whirl the avocado, whipping cream, chicken broth and lemon juice until smooth. Add salt to taste.

Ladle the soup into wide shallow bowls. Garnish each portion with chives, if desired.

This velvety green soup is a perfect starter for warm weather meals. Serve it with sandwiches for lunch.
