Remove all fat from bear meat at once, as it turns rancid very quickly. You should marinate bear meat at least 24 hours in an oil based marinade.

Cook as you would for a beef pot roast or beef stew. Cub meat will need at least 2 1/2 hours cooking and mature bear meat 3 1/2 to 4 hours.

Always cook to well done at avoid trichinosis. The internal temperature of the cooked meat must reach 160° and stay there for a minimum of three minutes.
