Sweet Pumpkin

2 pounds Pumpkin fresh
1/4 cup Corn Oil
4 ounces Tomato Sauce
1 clove Garlic crushed
1 cup Water
1/2 cup Sugar
3/4 teaspoon Salt divided
3/4 cup Yogurt plain
1/2 teaspoon Ginger finely chopped
1 teaspoon Coriander freshly ground
1/4 teaspoon Black Pepper

Optional Ingredients:
1 bunch Mint finely choppedAdd to shopping list

Peel the pumpkin, remove the seeds and cut into 2 inch cubes; set aside.

Heat oil in a large frying pan. Fry the pumpkin cubes for a few minutes until they are lightly browned.

In a bowl; mix together tomato sauce, garlic, water, sugar and 1/2 teaspoon salt. Add this to the pumpkin in the frying pan. Cook for 20 to 25 minutes over low heat until the pumpkin is fork tender.

Meanwhile mix together yogurt, finely chopped ginger, freshly ground coriander, the remaining salt and 1/4 teaspoon black pepper.

To serve: Spread half the yogurt sauce on a plate and lay the pumpkin on top. Top with the remaining yogurt and any cooking juices left over from the cooked pumpkin. Sprinkle with mint.

This dish is also known as Kadu Bouranee. Delicious served with Basmati rice and naan or pita bread.

Tips and Hacks

Make a bowl of orange jello and when it's semi-solid drip several drops of green food coloring onto the surface and stir in gently. They'll swirl into dark tornado clouds.
