Cornish Hen With Fuji Apples

2 each Cornish game hens
1 teaspoon Allspice
1 teaspoon Black caraway seeds
2 tablespoons Olive oil
1 pinch Salt
1 dash Black pepper
1 large Lemon
2 large cored, sliced Fuji apples
1 each Cinnamon stick
1 cup White wine
1 tablespoon Honey
1 teaspoon chopped Tarragon
1 tablespoon Lemon zest

Preheat oven to 400°F

Remove breasts and legs from hens and debone the thighs. Season with allspice, black caraway seeds, olive oil, salt and pepper. Squeeze the juice of one lemon over the meat.

Pan sear hens, skin-side down, on high heat for one minute. Turn and do the same to the other side. Remove breast and cook leg and thigh for an additional minute.

Place hens in baking dish bake at 400°F for approximately six to eight minutes. Add sliced apples, cinnamon stick, wine, honey, tarragon to same pan and heat through, about another 10 minutes.

Place apples on plate with some of the juice from the pan. Re-construct the game hen and sprinkle with lemon zest.
