Yields 4 Portions
1 1/2 cup cubed Bread
1 can drained Tomatoes
1/4 cup coarsely chopped Parsley
1 tablespoon Olive oil
3 cloves minced Garlic
1/2 teaspoon dried Basil
1/4 teaspoon Pepper
3 tablespoon freshly grated Parmesan cheese

Spread bread cubes on a baking sheet. Bake @ 375°F for about 5 minutes or until crisp and lightly browned.
Meanwhile, drain and cut tomatoes into quarters. In shallow 6-cup casserole dish, combine tomatoes, parsley, oil, garlic, basil and pepper. Stir in bread; sprinkle parmesan cheese over top. Bake, uncovered, in a 375°F oven for about 20 minutes or until heated through.
