4 pounds aged Moose meat
4 slices Salt pork
1/2 teaspoon Salt
1/8 teaspoon Black pepper
1/8 teaspoon ground Cinnamon
1/8 teaspoon ground Cloves
2/3 cup 5% Vinegar
1/2 cup Water
1 each Bay leaf
1 each sliced Onion
1 cup Cranberry Juice
1 cup Milk

Note: Marinate spiced moose meat in vinegar for 2 to 3 days in cold place before preparing the recipe.

Before baking, preheat oven to 300°F

Trim off any musty parts of the aged moose meat and wrap with salt pork. Sprinkle with salt, pepper, cinnamon and cloves. Marinate in vinegar for 2 to 3 days in cold place.

Drain the marinade; place in baking pan and add water. Cover and cook in slow 300°F oven about 1 hour. Add bay leaf, onion and cranberry juice, cover and cook until tender, about 1 hour longer.

Remove meat from pan and add milk to drippings. Heat to boiling and serve with moose.
