5 pounds stewing Chicken
4 large roughly chopped Carrots
2 large quartered Onions
4 cloves minced Garlic
10 whole black Peppercorns

Note: Refrigerate this broth for at least 2 hours before using.

Cut your chicken into pieces.

Pour 5 quarts water into an 8 to 10 quart pot. Add chicken pieces and bring to a boil. Reduce the heat to medium-low and add the carrots, onions, garlic and black peppercorns.

Simmer, covered with the lid slightly ajar, for 1 1/2 hours, skimming the top as necessary.

Strain the broth into a container. Discard the vegetables and bones.

Refrigerate for at least 2 hours. Skim the fat from the surface. The broth can be stored in the refrigerator for up to 2 days or in the freezer for 2 months.
