1 cup Pumpkin puree
2 large whipped Egg whites
1 cup packed Brown sugar
1 1/2 cups All-purpose flour
1 teaspoon Baking soda
1 teaspoon ground Cinnamon
1/2 teaspoon ground Nutmeg
1/2 teaspoon ground Cloves
3 cups Rolled oats
1 cup Raisins

Preheat oven to 350°F / 180°C / Gas Mark 4

Prepare baking sheet with cooking spray.

In a mixing bowl, combine pumpkin and egg whites.

In another mixing bowl, combine brown sugar, flour, baking soda, cinnamon, nutmeg, cloves, rolled oats, and raisins.

Mix wet ingredients with dry ingredients just until moistened. Drop by tablespoonfuls onto prepared baking sheet, 2 inches apart.

Bake for 12 to 15 minutes.
