3 pounds cored, peeled, chopped Apples
1/2 cup Water
3/4 cup Sugar
2 tablespoons Lemon juice
2 teaspoons Cinnamon

For your apples you can use Cortland, McIntosh, Golden Delicious, Gala.
In a large saucepan combine the apples, 1/2 cup water and sugar. Bring the mixture to a boil and simmer, stirring occasionally, for 20 minutes.
When the apples are tender and the mixture is the consistency of a chunky puree pass the apples through a food processor and return to the saucepan. Simmer the applesauce, gently, for an additional 5 to 10 minutes or until slightly thickened.
If necessary adjust seasoning with additional lemon juice, sugar and cinnamon to your taste.
