1 cup fine Matzoh Meal
1 large beaten Egg
1/4 teaspoon Salt
1/2 cup cold Water
1 tablespoon + 1 cup Corn oil
1 medium chopped Onion
1 clove minced Garlic
1 medium Potato
1/2 cup Cauliflower
1 medium Carrot
1/2 cup Green beans
1/4 teaspoon Pepper

Thinly slice the potato, carrot, cauliflower and green beans.
Mix matzoh meal, egg and salt together, adding just enough water to make a moist dough that holds together. Set aside.

Heat 1 tablespoon oil in a skillet, add onion and garlic; stir-fry over moderate heat until light brown, about 3 minutes. Set aside.

Blanch potato, cauliflower, carrots and green beans boiling water for 5 minutes. Drain well. Add these to pan with onion and garlic; stir-fry over moderate heat for 3 minutes, to mix well. Add pepper. Taste and add salt if needed. Cool.

Take 1 heaping tablespoon of dough and press it out on a flat surface into a 2-1/2 inch square. Put 1 tablespoon of vegetable mixture on bottom half of square and fold it over into a triangle. Prepare all Samoosi this way.

Heat 1 cup oil in a wok or a skillet. Brown turnovers over moderate heat for about 5 minutes. Drain on paper towels.
