Maccaroncelli Alla Quintiere

Yields 4 Portions

4 tablespoons Butter
1 each Onion; chopped
1 stalk Celery; chopped
1/2 each Green pepper; diced
1 each Tomato; peeled, chopped
4 ounces Gorgonzola cheese; diced
2 ounces Chicken broth
2 tablespoons Parmesan cheese; grated
2 tablespoons Grated Romano Cheese; grated
2 ounces White wine
8 ounces Macaroni

Note: AKA Macaroni with Cheese

Cook the macaroni according to the package instructions.

Meanwhile: Melt the butter in a large frying pan. Add the onion, green pepper, and celery; saute until golden. Add the tomato and simmer for 5 minutes.

Add the Gorgonzola cheese and cook over low heat until melted. After the cheese has melted, add the chicken broth, grated cheeses and wine. Simmer for 5 minutes.

Drain the cooked macaroni reserving 1/2 cup of liquid. Add the macaroni and cooking liquid to the frying pan and toss well with the sauce until all the pasta is well coated. Serve immediately.
