Yields 8 Portions
1 2/3 cups All-purpose flour
1 tablespoon Baking powder
1/4 cup Sugar
1/4 teaspoon ground Cinnamon
1/4 cups melted Butter
2 large beaten Eggs
1 1/4 cups Milk
2 large grated Apples
3/4 cup light Brown sugar

Sift the flour, baking powder, sugar and cinnamon into a bowl.
Beat in the melted butter, beaten eggs and milk. Grate the apples into the mixture and mix in well.
Oil a heavy-based frying pan. Drop spoonfuls of the apple batter on to the oiled surface, making pancakes of 2 to 3 inches and leaving a space between them. Cook for about 2 minutes or until small bubbles appear over the surface, then, with a spatula, turn each over to cook on the other side.
Serve hot with cinnamon butter.
