Yields 4 Portions
1 kilogram Octopus
3 large beaten Eggs
1/4 cup Milk
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/4 cup chopped Parsley
1/2 cup Olive oil

Boil the octopus, drain and cool. Cut it up into generous chunks.
Beat 3 eggs with the milk; add salt and pepper to taste and half a bunch of very finely chopped parsley. Coat the octopus pieces in the egg mixture.
In a shallow pan; fry in a little olive oil, turning them until are golden. Serve.
