1/2 pound chopped Andouille sausage
1/4 medium chopped Onion
1/4 medium chopped Red bell pepper
1 clove minced Garlic
1 tablespoon Butter
2 large Eggs
1 dash Tabasco sauce
1/2 cup Monteray Jack cheese
1/2 cup Cheddar cheese
2 each Flour tortillas

You can substitute Chorizo sausage for Andouille.
In a pan, saute andouille with onion, red bell pepper and garlic for 5 minutes.

Meanwhile; break eggs into a bowl. Add Tabasco sauce and beat well.

Add butter to andouille mixture. Add eggs, and scramble. Turn off heat, add cheeses and stir to blend. Heat tortillas. Spoon egg mixture onto tortillas, roll up and enjoy.
