Fabulous Pumpkin Bread

Yields 3 Portions

3 1/2 cup All-purpose flour; sifted
1 cup Sugar
1 cup Brown sugar
1 1/4 teaspoon Salt
3 teaspoon Baking soda
1 teaspoon Cinnamon
1 teaspoon Nutmeg
1/2 teaspoon Cloves; ground
2 tablespoon Molasses; dark
1 cup Vegetable oil
4 each Eggs; lightly beaten
2/3 cup Water
2 cup Pumpkin; canned
1 cup Walnuts; chopped
1 cup Raisins


Before baking, preheat oven to 350°F / 180°C / Gas Mark 4

Lightly oil and flour 3 8-1/2 X 4-1/2 loaf pans or 2 larger loaf pans.

Combine all ingredients and mix together vigorously. Pour equal amounts of the batter into the prepared loaf pans.

Bake in a pre-heated oven at 350°F for 1 to 1-1/2 hours until a toothpick inserted into the center comes out clean.

Let the bread cool in the loaf pans on a wire rack. This pumpkin bread freezes beautifully.
