Ingredients:

14 ounces Thai Coconut milk, canned
1 tablespoon Thai Curry base
1 pound fresh or frozen Scallops
2 tablespoons Fish sauce
2 teaspoons Lemon juice
1 pound chopped Lobster, cooked
1 ea diced Tomato, fresh
3 ea diced Scallions
1 ea diced Yellow pepper, sweet
2 cup sliced Mushrooms
2 teaspoon Thai Sumac
4 sprigs sweet Basil, fresh
Add these ingredients to your Shopping List.
Directions

In a large saucepan, combine coconut milk with curry base over medium heat until oil appears on top. Add scallops, fish sauce, lemon juice and simmer for 5 minutes, stirring occasionally.

Add lobster, tomato, scallions and diced yellow pepper. Cover and simmer for 5 minutes. Add mushrooms and garlic chili sauce to taste. Cover and simmer 5 minutes.

Serve hot over rice. Garnish with sprigs of fresh sweet basil.
