Preheat oven to 350°F / 180°C / Gas Mark 4
1 unbaked Pie crust
8 ounces softened Cream cheese
2 tablespoons Granulated sugar replacement
1 teaspoon Vanilla extract
1 1/2 cups unsweetened Pumpkin puree
1 cup Evaporated skim milk
2 large lightly beaten Eggs
1 teaspoon Cinnamon
1/4 teaspoon ground Ginger
1/4 teaspoon ground Nutmeg

Combine softened cream cheese, sugar replacement, vanilla and 1 egg in a bowl. Stir well. Spread into bottom of the unbaked pie shell.
Combine the pumpkin puree, evaporated milk, 1 egg, cinnamon, ginger and nutmeg in a mixing bowl or work bowl of food processor. Beat or process until well blended.
Carefully pour the mixture over prepared shell. Bake in a 350°F oven for 65-70 minutes or until a toothpick inserted into the center comes out clean. Cool and serve.
