5 large hot Potatoes
1/4 cup Milk
2 teaspoon Butter
2 large Egg yolks
1 each finely chopped Onion
1/4 cup finely chopped Celery
1 tablespoon chopped Parsley
1 tablespoon dried Savory
1 pinch Salt
1 dash Pepper
2 unbaked Pie crusts

Preheat oven to 400°F

Line a 9-inch pie plate with 1 pie crust.

Mash potatoes with enough milk to make a smooth puree. Add butter and 1 egg yolk. Combine potato mixture with onion, celery, parsley and savory; season with salt and pepper to taste.

Pour potato mixture in pie shell. Cover with top crust, trim and crimp edges to seal. Make 2 cuts in the top crust to allow steam to vent. Brush top crust with remaining egg yolk.

Bake in a preheated 400°F oven for 30 to 40 minutes or until pastry is golden brown.
