3/4 cup Sugar
1 tablespoon melted Butter
2 1/2 cups All-purpose flour
2 1/2 teaspoons Baking powder
1/2 teaspoon Salt
1/4 teaspoon ground Nutmeg
1 cup chopped Dates
1 cup Milk
1 teaspoon Lemon extract

Note: You will also need vegetable oil or shortening for deep-frying.

Heat oil to 375°F

In a bowl, combine eggs, sugar and melted butter; beat well.

In another bowl, combine flour, baking powder, salt and nutmeg. Fold in dates. Add dry ingredients to egg mixture alternating with milk and lemon extract.

Heat oil in deep fryer to 375°F. Drop batter by tablespoonfuls, 2 or 3 at a time, and fry for about 3 minutes, until golden brown, turning once.

Drain on paper towels.
