Yields 20 Portions
1/2 pound chopped Dates
1 cup Sugar
1 cup Water
1 3/4 cup Quick oats
1 3/4 cup All-purpose flour
1 teaspoon Baking soda
1/4 teaspoon Salt
1 teaspoon Vanilla
1 cup Brown sugar
3/4 cup melted Butter

In a saucepan, combine dates, sugar and water. Cook over medium-low heat until thick. Remove from heat.
In a bowl mix together, quick oats, flour, baking soda, salt, vanilla and brown sugar. Add the melted butter and mix well to a crumb consistency.
Press half of crumb mixture into a 9 x 9 pan, patting down firmly. Spread the thick date mixture over the crust. Top with the remaining quick oats mixture.
Bake for 20 minutes in a 375°F oven, or until golden brown. Cool thoroughly and cut into bars.
