2 medium barely ripe Avocados
1 clove minced Garlic
1/4 cup fresh Lime juice
1/4 cup Vegetable oil
1/2 teaspoon Salt
1/2 teaspoon Sugar
2 tablespoons finely chopped Cilantro

Cut the avocado in half, remove the pit and scoop out the flesh. In a food processor, blend avocados with garlic until smooth. Add lime juice and process until thoroughly combined.
With the machine running, gradually add oil to mixture until well blended and thick. Season to taste with salt and sugar. Refrigerate until ready to serve.
Just before serving, blend in the chopped cilantro.
