4 medium Potatoes
1 tablespoon Salt
1 medium finely minced Onion
1 medium chopped Dill pickle
1/2 teaspoon rinsed Capers
1/2 cup Vegetable stock
1 tablespoon Vegetable oil
2 teaspoons spicy Mustard
1 tablespoon Lemon juice

Cook the potatoes in their jackets in salted water. When the potatoes are cooked and cool enough to handle, peel and slice them, and set aside.

In a small bowl, whisk the onions, pickles, capers, vegetable stock, vegetable oil, spicy mustard and lemon juice. Taste and add salt and pepper as needed.

Pour dressing over the potatoes, and marinate for 30 minutes before serving the salad. Serve warm or cold.
