Bring 2 cups of water with curry powder to a boil. Add Basmati rice. Cover with a lid and turn off the heat. Leave, undisturbed for 25 to 30 minutes.
Cool down and fill into plastic container. Add any raw vegetables you like, for example, cauliflower, mushrooms, broccoli, zucchini, okra, etc. At lunchtime, microwave for about 5 minutes or until veggies are cooked.
