4 cup Apple cider
1/4 cup diced Fresh ginger
1/2 cup Brown sugar
2 teaspoon Cinnamon

Puree 1/4 cup apple cider together with the ginger. Place the puree in a saucepan with the remaining cider, brown sugar and cinnamon.
Simmer for 30 to 35 minutes over medium heat until reduced to the consistency of maple syrup.
