Apple Jerky Salsa

Yields 1 Portions

1 cup Apple cider
2 each Green apples; diced
4 tablespoon Onion; diced
1 1/2 teaspoons Extra virgin olive oil
2 each Poblano peppers; seeded, diced
1/2 teaspoon Oregano; ground
1 teaspoon Sugar
1 teaspoon Lime juice
1 teaspoon Balsamic vinegar
1/3 cup Beef Jerky; diced


You can substitute Venison jerky for the Beef jerky.

In a saucepan over high heat reduce the apple cider to 1/2 cup. Lower heat to medium, add diced apples and cook for 5 minutes until soft. Transfer to a mixing bowl and set aside.

In a skillet, saute the onion and poblano peppers in the oil for 5 minutes, until tender. Combine with apple mixture. Add the oregano, sugar, lime juice, balsamic vinegar and diced beef jerky; mix thoroughly.
