You can substitute Venison jerky for the Beef jerky.
In a saucepan over high heat reduce the apple cider to 1/2 cup. Lower heat to medium, add diced apples and cook for 5 minutes until soft. Transfer to a mixing bowl and set aside.
In a skillet, saute the onion and poblano peppers in the oil for 5 minutes, until tender. Combine with apple mixture. Add the oregano, sugar, lime juice, balsamic vinegar and diced beef jerky; mix thoroughly.
