Peach Coffee Cake

Yields 8 Portions

2 cups All-purpose flour
1/4 cup Sugar
1/2 teaspoon Salt
1 package Yeast
4 tablespoons Butter; + 2 tbsp
1/2 cup Water; hot
1 large Egg; room temperature
1 1/2 teaspoons Vanilla
1/4 cup Brown sugar
1 tablespoon Butterscotch pudding mix; dry
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg
2 cups Peaches; sliced
1/2 cup Powdered sugar
2 teaspoons Milk


Preheat oven to 400°F

In mixer bowl combine 1/2 cup of flour, sugar, salt and yeast. Add 4 tablespoons of softened butter. Add water; beat 2 minutes at medium speed.

Add egg, vanilla and another 1/2 cup of flour. Beat at high speed 2 minutes. By hand, stir in 3/4 cup flour to make a stiff batter. Spread in greased 9" square pan.

Combine remaining 1/4 cup flour, brown sugar, butterscotch pudding mix, cinnamon, and nutmeg. Cut in 2 tablespoons of cold butter until crumbly. Sprinkle over cake.

Arrange peach slices on top. Cover and let rise in warm place, free from draft, until doubled in bulk, about 1 hour. Bake at 400°F for 25 minutes. Cool in pan 10 minutes, remove and cool on wire rack.

Mix powdered sugar and milk to make a glaze. Drizzle the glaze over the top of the cake. Serve.
