Yields 4 Portions
1 pound Beef tenderloin
4 tablespoons All-purpose flour
1/2 teaspoon Salt
4 tablespoons Butter or margarine
1/2 cup sliced Mushrooms
1/2 medium chopped Onion
1 clove minced Garlic
1 tablespoon Tomato paste
10 ounces Beef broth
1 cup Sour Cream

Cut the beef into 1 inch strips and coat it with the salt mixed with 1 tablespoon flour.
Brown beef strips quickly in 1 tablespoon butter in a skillet. Add mushrooms, onion and garlic; cook until onion is crisp-tender, 3 to 4 minutes.
Remove meat mixture from pan. Add 2 tablespoons butter to pan drippings; blend in 3 tablespoons flour. Add tomato paste. Stir in beef broth. Stir over medium heat until thick and bubbly.
Return meat mixture mushrooms to the pan. Stir in sour cream; cook slowly until heated through. Do not boil.
Serve over hot buttered noodles.
